- Whisk curd nicely.add 1 tbsp milk & water each.I kept it little thick & not diluted as our routine raita.mix salt & sugar.vegies will release moisture as well which again helps in dilution
- Dice cucumber finely(no big chunks)finely chop fresh mint & coriander with few red green yellow orange small chillies.churn eggplant directly over stove. Remove black skin & mash flesh.
- Mix sumac zatar cucumber herbs chillies olives in eggplant well with 1 tbsp olive oil Add in yogurt.blend with spoon completely
- Top up with ganish of both herbs & olives drizzle with olive oil (optional I did not.serve with any meal or snacks.could be a diet lunch as well.
