The ingredients needed to make Plain/ Sada Dosa:
  1. Get 1 cup regular rice
  2. Make ready 1 cup or 2 cups parboiled rice / parboiled rice
  3. Make ready 1/2 cup urad dal
  4. Make ready 1/2 tsp methi seeds
  5. Make ready 2 cups water for soaking rice
  6. Get 1 cup water for soaking urad dal
  7. Make ready As needed Add water for grinding urad dal
  8. Get as required Water or grinding rice
  9. Make ready as per taste Salt
  10. Take as required Oil
Steps to make Plain/ Sada Dosa:
  1. Soaking: - Rinse & drain the rice and urad dal twice separately. Soak both in a separate pot for 4 to 5 hours. Add 1/2 tsp methi seeds in the urad dal while it's soaking.
  2. Grinding: -Drain water from soaked rice and dal. In a mixer jar, add urad dal and 1/4 cup water and grind for a few seconds. If required, then add another 2 to 4 Tbsp of water. Grind until you get a smooth and fluffy batter. Pour Urad batter in a bowl and keep it aside. Then grind the rice in a Mixer jar to make smooth batter. Add water if required to make smooth paste.
  3. Fermentation: - In a large bowl, mix both batter together. Add salt. Mix together the batter with your hands for 1-2 minutes to help the fermentation process. The batter should have a consistent flow but it shouldn't be runny. Mix well. Cover and let the batter ferment for overnight or more if required. After 14 hours, my batter was well fermented, frothy and increased in volume.
  4. Making Dosa:- - Heat a nonstick frying pan and spread 1/4 tsp oil all over it. Pour ladle full of dosa batter. Gently spread the batter outwards direction. Cook over low to medium flame depending on the size and thickness of the pan. - Sprinkle 1/4 tsp oil on the edges and over dosa when batter on the top is cooked. Cook until the base is nicely golden and crispy. The base will start to leave the pan.
  5. Flip the dosa over and cook on the other side for 2-3 mins. - Flip once again and fold the dosa. Remove from the tawa and serve hot.
  6. Serve with crispy, soft and tasty Plain Dosa with sambar, red chutney, green coconut chutney or potato masala.
